Edit: By "we" you mean Boeing I take it? And there is ONE HUGE DIFFERENCE. Pilots of Boeing aircraft can turn the FBW off! Airbus First Officers and Captains can't. And the Airbus has a glorious history of that being a not-so-good idea.
