Was there a 6.5?
I remember 6.0, 6.1, 6.2 but then (I thought) 7.0 followed 6.2.

Interim release
It was a hybrid of 2.2 and 2.4 kernel installs. It was very briefly out to take marketing advantage of the newly released 2.4.0 kernel. Mandrake 6.5 has just been released and Red Hat was obliged to keep up. It was never a fully supported release. IIRC there was an "instant upgrade" coupon to go to 7.0, which itself had big problems form rushing things.
It shows you how stupid the hiring world is. I'm sitting here with 8 real years of everyday use and this job is open, and the fucking drones don't even know what they are hiring for.

You've nothing to lose. In your cover letter, emphasize your continuing advancements with the RH releases.
Worse thing that could happen is they say no...

The newest level of Red Hat Enterprise Linux is version 3.

Like I said, there was an interim version of Red Hat 6.x that was out for only a few months with a big "free upgrade to 7.0" sticker on it. I'm totally certain of this because I went to Best Buy to get it, and instead settled on Mandrake 6.5 - at the time Mandrake was something like Orange Hat, a near clone of Red Hat for half the money. In any case here's the job req I was bitching about:
Linux Administration/Support- ASAP
RedHat 6.5 Administration. Must have real-world Enterprise level Linux experience. Will also provide Architecture and support to group in Linux RH 6.5. Must be a Linux RH Heavyweight. LINUX administrator job description. We are looking for three or more years experience in an Enterprise environment. Please not someone who has it installed on their PC at home. Vendors actually send them in to us.
Job Description
Install, configure and maintain the organization's Linux OS and server hardware. Perform administrative support functions required for production, development and test servers as well as stand-alone multi-user systems associated with the home office and contingency center. Analyze and resolve problems associated with server hardware, server operating system and applications software. Perform a wide variety of tasks in software/hardware maintenance and operational support of server systems.
Before Google was the mind, and the mind did prevail. Seriously, some people seem to believe if it ain't on Google it don't exist.
(As I now remember, the Mandrake 6.5 that I bought from Best Buy was actually a 6.1 release by Macmillan Publishing with extra things. At the time new "shelf" releases were appearing every couple of months. Chances are very high that only the box and the docs were significantly different from the Red Hat 6.2 release, and perhaps this Red Hat referred to in the job req was also some special version assoicated with a licensed vendor - IBM? - with RPMS that were subminor version bumps incorporating patches. Mandrake was the first distribution to really challenge Red Hat's total domination and Red Hat was scrambling to combat that. Yes, there was no "official" Red Hat 6.5 and there was no "official" Mandrake 6.5, that is true, but marketing does its thing.)

Repeat - I have no control over it. It's in the hands of the recruiter. "Show me three year's enterprise Linux experience on your resume..." There is no logic or sense to it. They are asking for experience that is impossible to have on an operating system that was never officially released.

Since you're not dealing directly with the company, you can explain everything to the recruiter, who ask client for verification.
Send it. Worse case, it get rejected.

I've **tried** to get her to tell me who this is for etc. She won't do it. "SHE". She doesn't bloody understand what she's recruiting for. She sideways suggested I lie on my resume.

Tell her she can
make 'appropriate' changes to the resume.
Then, if you get far enough to talk with someone that knows better, you can tell them that SHE changed the resume.
