Purchase requisite ingredients.
Follow recipe.
Wait.
Remove loaf from bread machine.
Disconnect and clean bread machine.

Oh well in that case...
Some things I'd try for your older style bakery technique.
Try a metal dish. Remember to grease or line it.
Are you using the right sort of yeast?
Although this is unlikely to affect the baking, are you using the right amount of salt? A loaf of bread requires more than most people think.
Yes, try a slower oven. 30 minutes sounds way too fast.
