"As spicy as you want it to be".

The heat in this dish is controlled by the chili powder. Vary that and you vary the heat. Cumin, coriander, turmeric and garam masala add flavour, not heat.

A vindaloo can be made mild, despite its reputation for the contrary, simply by holding back on the green chili peppers.

New Rogan Josh is a Moghul dish from Northern India.
It should be judiciously seasoned with sweet and aromatic spices - very light on chilis, if any at all.

Keep in mind, this recipe was established long before the Portuguese brought chili peppers to India. In southern India, pre-chili dishes were made hot with large doses of black pepper and ginger, but these were not much available in the North.

Keep also in mind, a blue ribbon Rogan Josh isn't automatic - or it wouldn't be the definitive test for hiring a new cook in the region.
