"Small Gods" is one of my favorites.
So are most of the "Guards" cycle - I've read the following:
Guards! Guards!
Men At Arms
Feet of Clay
Jingo
Night Watch
They were rather good.
When somebody asks you to trade your freedoms for security, it isn't
your
security they're talking about.

I loved it. I wish someone would make a movie of it instead of making all this trash lately. It would be a fresh change of pace.

If you like those ...
Try Good Omens. Collaboration between Pratchett and Neil Gaiman. Kevin Smith obviously liked it enough to steal bits of it. See Dogma.
The word is that Terry Gilliam had been tapped to do the movie version of Good Omens and then the deal fell through after Dogma was released.

Kevin Smith is a riot. I heard he wasn't going to do anymore "Jay and Silent Bob" movies, but he is doing a "Clerks II"
Thanks for the suggestions. Off to the B&N website :)

There are two movies:
Wyrd Sisters
and
Soul Music
were made into animated films.
Worth watching if you've read the books and/or are British, since the accents in the films are pretty thick.
