Peruvian Cau Cau - (37k imgs)
Continuing the Tripe saga, we have here a traditional Peruvian dish, Cau Cau (though one presumes the Incas made it using llama tripe). Here it is prepared with book tripe, potatoes, onions and garlic.

Book tripe is the lining of the third stomach of a bovine beast. It's also known as Bible tripe and leaf tripe. Derivation of the name should be obvious.

Yeah, but it's soft chewy fabric . . .
. . and if you still don't like it you can make it from blanket tripe - or if you just can't stomach tripe at all maybe you could try squid. Firm tofu would work for flavor but you'd loose the texture.

Not in the near term.
I read an article on that a month ago and it's just too much trouble and too much smelly for too little return - and something you server with collards can't be all that good anyway.
Actually, it's not quite so much trouble now because, like tripe, they sell it in a pre-prepped form today - but I still haven't encountered enough positive press to attract my attention.
