Just to give you a flavor of the "norm" around here (except for, apparently, Andrew :-)
Yes Phila has Pepperpot which is tripe based (and good if done well). I also, from living and working on your side of the pond, became quite a fan of sweetbreads and pate made from various and sundry animal parts.
I'm just telling you that the "gag me out" response shown by our nerd friend is NOT uncommon.

Oh, I don't know how "not normal" it is.
Seems tripe soup called "Philadelphia Pepperpot" is not only popular but a large contribution of it saved Washington's army during the revolutionary war.
And throughout the Southwest, the Mexican version, menudo, is eaten with enjoyment by both by Mexicans and white folks. Chinese versions abound around here as well, such as "tripe in fermented black bean sauce", very tasty indeed.
As for the stuff in head cheese, most of you folks cheerfully eat the same stuff in a form called "hot dogs" and "sausages" - just in a less honest format.
Any, all this stuff is easily available in quantity anywhere in the U.S. if you don't avoid looking for it, so somebody must be eating plenty of it over here.

Quick non-representative survey around here
0 for headcheese, 12 against. Popularity probably depends on ethnic makeup and so on. I suspect that LA is not a representative sample of the country in this regard.

Most (of the non-vegetarians) here seem to prefer their bologna "smooth", while I prefer it "chunky". That doesn't mean it isn't the same thing you know.
As far as ethnicity, yes. Most of my knowledge about how to make all this indelicate stuff comes not from land of origin (where they try to present a "cleaned-up" image to the world) but from proud ethnic communities in places like Michigan, Ohio, Pennsylvania and Illinois.
As for LA not being a representative sample, I'm sure glad of that - the "representative sample" voted for George W Bush.

Bah.
I've had the extreme displeasure of living in the "heartland" (aka Mid-West aka Jesusland) for longer than I've lived anywhere else (almost 18 years). While I'll grant that there a pockets of civilization in Michigan, for the most part Michigan == Indiana == Illinois == Iowa == Ohio == Kansas == Nebraska. It's all the same everywhere in this cultural tundra. Damned pity such fertile soil is wasted here imo.
