"There are dishes found only in the palace and the peasant's hut. They are in the pesant's hut because they're cheap, and in the palace because they're good, and nowhere else because they're disgusting."
Aside from tipe and head cheese, pigs feet come to mind, and they are a favorite - fresh or pickled (but to get the best pickled you have to pickle them yourself - the ones in the barrel at a proper butcher shop are decent but "name brand" in jars are inedible).
