Cats & Dogs, oh my!

Well I started out this weekend on a Cow page, but got distracted and instead did [link|http://www.aaxnet.com/clove/ingredients/dogcat.html|Cats and Dogs] - a much more "bite size" project. Meanwhile I made Korean tripe soup (very simple, but good) and a batch of collard greens with beef and beer (also very good - but very different). Recipes soon.

Tripe is just the Stomache Lining. Sheesh.

Before you go "grossing out" it doesn't taste like you'd expect.

Tripe in many place is considered very good food, due to the length of time for coooking (stew, soup or low heat roasting) and seasonings used and processing it gets.

I'll bet you'd like it if you weren't told what it was. Most tripe sold is Beef, but Pork and Sheep/Lamb tripe is claimed to be even more tasty.

Head cheese, Yes!

Love the stuff - wish it weren't so fattening. The version at my local store is made of big chunks so you can tell the ears from the snouts from the tongues and stuff.

Even the many years I was (mostly) vegetarian, processed pig parts were my major weakness.

She was expressing the fact that she didn't like head cheese. It is perfectly OK for her to not like head cheese. Just like it is OK for you to be unable to stomach fresh salad.

She didn't say that meat eaters are gross and shouldn't participate in a cooking forum. No offence was intended, and none should be taken. Particularly by bystanders who she didn't even know where present, let alone have any intention of addressing.

To follow up on your analogy, you've mistaken a sour raspberry for gunshots directed at your head. And opened return fire. Then you wonder why everyone thinks that you're overreacting.

In particular you not only indicated a negative impression of vegetarian food, but you told her that she shouldn't be in this forum. It is OK for you to dislike vegetarian food. (Though by your standards for you to say that insults everyone present who is vegetarian, and you shouldn't be doing it. For the record I happen to know that there are other vegetarians present, though I don't really want to drag them into it by naming names.) But it is not OK for you to arbitrarily start telling other people where they may or may not post. Who made you God around here?

While she didn't intend to offend (and I believe that you clearly shouldn't be taking offence), you clearly did intend to offend. Were I in your shoes, I'd be apologizing about now. Oh, we don't need to be so harsh - yet.

Many vegetarians try to convince themselves they're repulsed in hopes of staving off back-sliding just as reformed smokers do. We needn't mock them just because they're, well, weak.

On the other hand, I find it fascinating that a person who tells us she makes her living drawing and quartering small living beings (or formerly living, anyway) "vomits" at the thought of head cheese and tripe (1).Perhaps such a person should reconsider her career choices? What a delicious dilemma if she aspires to veganism!

On the other hand, this is the Internet where "nobody knows you're a dog", and we have yet no physical verification (not even pictures) so this dislocation could be the beginning of an unraveling, which would be a lot of fun in its own right.

(1) Many years ago (before anyone knew about sushi) I sometimes patronized Yama's original sushi bar for lunch. One lunchtime a bunch of doctors from a local hospital (their consumption of creepy-crawlys is strictly between them and their rabbi) settled in. The whole lunch time they discussed various "interesting procedures" they'd recently performed on children.

As I was leaving, I told them it didn't upset me, but if there had been other patrons I'd have had to protest their subject matter. They explained it was a game they played to see just how much they could take and still enjoy a lunch of sliced raw and slimy critters.

You've been pretty consistent, so I certainly don't expect you to turn out other than what you say, I believe in applying the benefit of the doubt quite liberally in any case, but I wouldn't be shocked if you did.

As for making it a "big freakn deal", you've contributed your fair share, so there's no cause to get all huffy.

I would still find it a delicious set of rationalizations for a vegan to work opening up critters for scientific divination, but, alas, you haven't claimed to be one of those.

As I said, I spent time (about a decade) being a vegetarian, though not an "ethical" one nor pure (going out I'd eat what I was served regardless), but bein' a farm boy I wasn't about to be disgusted by what anyone else wanted to eat - I'd already seen it all and where it came from.

_I_ find head cheese disgusting (gaggingly repulsive, in fact) - and I butchered animals regularly as a kid without qualm. It was a part of farm life. I've had head cheese, too - my grandmother used to make it. The taste and the idea of it are BOTH repulsive, IMO. I can't account for other peoples' tastes - nor do I try.

I know people that think my taste for steak tartar to be disgusting and sickening, though they have no trouble gutting a trout or skinning an animal, for example.

Why, in your opinion, must all biologists refrain from being vegitarians?

I personally can comprehend reasons to be vegitarian, after dissecting (not just butchering) large numbers of animals.

I was responding not to that but to her reaction to what others eat as disgusting, in particular her reaction to tripe, which is a pretty inocuous substance and enjoyed all over the world, particularly in France where it's done up with Apple juice and Armignac. I made that many years ago and it was delicious.

Oh, I don't know how "not normal" it is.

Seems tripe soup called "Philadelphia Pepperpot" is not only popular but a large contribution of it saved Washington's army during the revolutionary war.

And throughout the Southwest, the Mexican version, menudo, is eaten with enjoyment by both by Mexicans and white folks. Chinese versions abound around here as well, such as "tripe in fermented black bean sauce", very tasty indeed.

As for the stuff in head cheese, most of you folks cheerfully eat the same stuff in a form called "hot dogs" and "sausages" - just in a less honest format.

Any, all this stuff is easily available in quantity anywhere in the U.S. if you don't avoid looking for it, so somebody must be eating plenty of it over here.

Most (of the non-vegetarians) here seem to prefer their bologna "smooth", while I prefer it "chunky". That doesn't mean it isn't the same thing you know.

As far as ethnicity, yes. Most of my knowledge about how to make all this indelicate stuff comes not from land of origin (where they try to present a "cleaned-up" image to the world) but from proud ethnic communities in places like Michigan, Ohio, Pennsylvania and Illinois.

As for LA not being a representative sample, I'm sure glad of that - the "representative sample" voted for George W Bush.

I've had the extreme displeasure of living in the "heartland" (aka Mid-West aka Jesusland) for longer than I've lived anywhere else (almost 18 years). While I'll grant that there a pockets of civilization in Michigan, for the most part Michigan == Indiana == Illinois == Iowa == Ohio == Kansas == Nebraska. It's all the same everywhere in this cultural tundra. Damned pity such fertile soil is wasted here imo.

Maybe some perspective will help.

CRC used to be able to flame like the Usenet trolls of yore. All and sundry were much impressed by his flamage, which became all the more impressive when we realized that he lived in Finland, and didn't speak English as his native language. He's also been quite coherent and has a point to make with his flames in the past.

He mainly takes the time to flame people he actually appreciates - not sure what the Freudian implications of that are, but if you've been flamed by him, you're pretty much guaranteed to be "one of the good guys."

Lately, however, his flames have been lacking a certain something. My guess is that fatherhood has mellowed our CRC a bit, and he just doesn't have the energy to really get ye old napalm chucker rolling any more...

I used to think that once, but once you become accepted and an actual part of IWT, everything fits into place, and everyone has their place. And well, when any of them are missing, it's just not the same place. Case in point, DeSitter, who left us a while back. Without his take on certain things, certain things seem lacking. Yeah, I know, he bugged all of us at one point or another, but he still contributed enough to be interesting and fill one of the gaps here.

CRC is a wonderful person when you get to know him, understand the way he posts, and you might even come to enjoy him, as I have. :)

My general advice is, if you can't face what it is, then you shouldn't be eating it - so you're on the right diet.

Having been raised on farms and been face to face with the necessities there, I've got a somewhat different attitude towards farm animals and life and death in general than city folks do.
