It is possible to eat a varied diet with diabetes, it just is very, very hard. Given that you don't need to get lots of carbs for pregnancy, you might consider trying Atkins. My wife's situation was that she had gestational diabetes, but couldn't do Atkins because she needed to supply carbs to the baby. He doesn't have that additional restriction, so has more freedom than she did. But you're right, the key is lots of little snacks, no big meals. That way no individual snack creates a sugar spike (followed by a sugar crash), but you're getting lots of goodies.
