Telling apt-get to look at CDs: apt-cdrom
Run apt-cdrom and feed your CDs into the CD drive. They'll be added to your /etc/apt/sources.list file. Run apt-get update && apt-get dist-upgrade and, with luck, you'll get an update off the CDs. You can modify this file by hand as well, or use apt-setup.
