We can put a man on the Moon...
But we still can't put plastic in a microwave. https://www.wired.com/story/for-the-love-of-god-stop-microwaving-plastic/ For both kinds of fluids and polypropylene containers, the most microplastics and nanoplastics—up to 4.2 million and 1.2 billion particles per square centimeter of plastic, respectively—were shed during microwaving, relative to the other storage conditions they tested.
In general, they found that hotter storage temperatures cause more plastic particles to leak into food. For example, one polypropylene container released over 400,000 more microplastics per square centimeter after being left in a hot room than after being stored in a refrigerator (which still caused nearly 50,000 microplastics and 11.5 million nanoplastics per square centimeter to shed into the stored fluid). “I got terrified seeing the amount of microplastics under the microscope,” Hussain says.

We should use glass containers in microwaves.

Pyrex is what we use for the most part
We have some plastic containers but they're mainly used by my wife for her lunch. She's nowhere near as paranoid as I am about health stuff.

Well that's cheery
I like pyrex, but someone needs to get smart and make stackable ones. I can't keep enough of them in my kitchen.

They do.
https://www.amazon.com/gp/product/B0157G34AYThe package comes with two of each size. The individual sizes aren't really stackable with themselves, but if you put one of each size inside of each other, you can then stack the second group on top of that. There are two other problems with Pyrex though: 1. they're going through bankruptcy 2. the lids for the newer stuff *always* crack on the edges

If you're looking for space
Easylife Over The Sink Dish Drying Rack, Black 3 Tier Stainless Steel Large Kitchen Dish Rack, Dish Drainers for Home Kitchen Counter Storage, Above Sink Dish Racks Organizer with Utensil Holder https://a.co/d/ddNz5mvI have a bunch of these. One over the sink and one on the counter and one on a rolling steel top kitchen counter. We don't waste an inch here.

I want that, but it wouldn't work in this house
Our sink has an opening behind it that used to be a window to the back yard. When they put an addition on, the window came out but the opening is still there.
One of the cats loves climbing up on the couch in the next room and coming through the opening to get attention. We've had to stop putting things on the windowsill because he kept knocking them off.
A year of trying hasn't taught him to stop doing it yet, so we've conceded the point. That's his hallway now.

Ignore the over the sink name
See if you can visualize placing one over the counter or any other flat space within reach in the kitchen. It's amazing how much you can pack into these things.
Got any wasted floor space? Get a rolling steel top counter with one of these racks attached to the top.
If you get several rolling counters you can swap them back and forth depending on what you're cooking that moment.

The limit is what the MIL will tolerate
There's already a stool in the middle of the only clear floor space that she moves around to wherever she's putzing around. Everyplace else is too narrow to add a useful counter and still walk by it. In theory, though, in whatever is the next house, I want to replace counters with commercial kitchen steel tables, and under them Snap-On tool chests with wood tops. Need to do some cutting? Pull it out and there's a solid work surface. Plus the ball-bearing drawers are more heavy-duty than anything you'll find designed for a kitchen. Basically the top like in the first pic below, installed like the second pic but with the steel and wood tops swapped between the cabinet and the table.

It's actually cheaper than a lot of actual kitchen hardware
The commercial kitchen tables especially are so much cheaper it's ridiculous.

That's a great idea - especially now that colors are "in" for kitchens. Thanks.
