I think it's mostly Southern African expats (there are quite a few in Texas) and adventurers - plus supply shortages.

In some tourist hotels in South Africa, if you manage to eat a Mopane Worm, witnessed by the waiter, you get a special certificate.

New Only stuff I've seen generally available is made with cricket flour
And that's mostly been energy bars targeting the Crossfit/paleo crowd.
