AFAIK, most recent video receivers take RCA/HDMI/S-Video/etc. inputs and can output any of them to a single HDMI cable. (Be careful about the audio to the TV - there can be some issues there, I think.) I think there are different kinds of upconversion - e.g. 480 DVDs to 720p or 1080i. What your TV will display will be its native resolution - the main question is the sophistication of the interpolation and whether it makes sense for the receiver or the DVD player or the TV to do it.
