So I'm making myself some dinner.
Comes time to deglasse the beef and onions, and I'm out of wine. No problem, tequila is a fine substitute. Pour a nice big splash into the hot pan. A huge whoosh of steam, which I suddenly realize is not comprised of water vapor so much as a lot of much longer and more ert molecules. And nice big flames underneath. One of my stove's better features is a defective burner that puts out more heat than it ought to.
Very happy to not have had that big fireball happen.
The results were quite yummy. But next time, I'll let the pan cool first and then put heat under it.
