Maybe you know where to look
I spent about 20 minutes trying to figure out the length and vertical drop of that run. Maybe it's on one of the French-language sites, but I didn't see anything that looked like distance or height figures.
As for how sane it is -- or isn't -- it's pretty much the Pike's Peak run in reverse.

I haven't watched the video yet, but I assume it's shot somewhere along this path.

123.4 km. From there, Google Earth or Maps should be able to give elevation changes, in principle.
Alternatively, this site says the are several Venosc routes.

Firstly, go watch the video
Secondly, it's nearly seven minutes of high-speed downhill switchbacks. Definitely not a loop course.
Thirdly, how do you *find* this stuff? That second link, by the way, mentions a 4100 ft. Venosc road circuit. So easily the run in the video could be several thousand feet down.

I didn't know it was a bike trail. The maps I found were of road courses.
How did I find it? I think I did variations on "Venosc bike altitude" "Venosc bicycle altitude" and so forth and followed a few links.
It looks like that run may be the one they describe here:
