New It's all about the coffee...

New Ummm . . . I'm not really into waiting 8 hours . . .
. . for a cup of coffee, and I probably actually like the acidity and bitterness. I'm just not into wimp coffee.

I use the [link|http://chemex.125west.com/|Chemex] with the non-bleached filters. The model I use is no longer available (plastic collar with handle), but the all glass (fused on glass handle) is also excellent. I don't like the famous wooden collar due to high maintenance (disassembly and reassembly when washing and constantly breaking leather strings)

New I can see the attraction.
But I normally use a single-cup drip filter: this is basically two cups inside one another - the inner one has small holes in the bottom and the outer one has a fine metal mesh on the bottom. You spoon in grounds in the outer one, put the inner one in, put both on top of your mug and put in boiling water. After about a minute, you lift it off, rinse both bits under the cold tap, add suger, milk, whatever to your mug. At home, I usually use instant.

I'm not a connoisseur of coffee to a huge extent; I'm just a little fussy. I have particular instant blends I prefer (and some I refuse to use) and particular types of coffee beans I use in the drip filter (I use hand-grinder, too).

New I only drink coffee in the very early morning . . .
. . but several (tea size) cups in quick succession. If it's a day when L is here it is necessary to have plenty of coffee hot and ready all day long. Brewing by the cup just won't work here.

Beans are ground fresh for every batch but nor do we consider ourselves coffee connoisseurs - we just like good coffee. I always drink it straight and L always uses adulterants. Decaff is not drunk here.
