I've been making this one for a few years and it always gets a good review from the consumers. Dead simple to make.
1 pound of scallops, undrained
1-2 cloves fresh garlic
5-6 green onions chopped well into the green
Fresh ginger to taste
1 half pound butter
Angel hair pasta
Melt butter in large fry pan
Saute garlic, onions and ginger (I use 3 thin slices off a fat end)
add in scallops and juice
cook scallops till they are just getting firm then remove them from pan
add one glass of champagne to sauce and reduce
add scallops back for 30 seconds or so.
About the time you start to reduce the champagne, start your angel hair pasta. It should be finished by the time the scallops get done.
This is taste treat but it's delicate so be careful with side dishes. Sugar snap green beans is good or a simple salad with a light dressing. Finish the champagne with the meal. I also like Irish soda bread with this but that might be too much carbs for some.
