The title of that one is "Scarborough Fair/Canticle"
Also I should note that Scarborough Fair is a traditional song. It traces back to an old Scottish song called, "The Elfin Knight".
You might be confused because Simon and Garfunkel named their album "Parsley, Sage, Rosemary and Thyme".
