I always wondered about that
Customizable defaults have their downsides I guess... I think I would've forced users to set signatures only on the Preferences page from day one. But then, many a user has done what I never expected ;)

Yep.
The signature pref is more of a convenience than anything. "Here's what I would like it to be by default, but just so I don't have to type so much." And removing the during-posting edit ability wouldn't fix the issue, as people could still go edit their signature for each post.
