Because - it being meant as a headless server, our host took back the keyboard he loaned us.

I thought this OS was supposed to be good for servers? Is there a trick to make that never happen again?

Have begun the Debian adventure - installer seems decent - looking forward to apt-get nirvana.

Incidentally, the debian install keeps crapping out telling me to look in a mythical log file for more info that doesn't exist.

Usually, in the "first page" there's a bit that points to "halt on x". Alter until Keyboard isn't an option.
