Yes in fact they are edible.
In some parts of Oz, like for example Dubbo in N-W New South Wales, there is a thriving industry in pig hunting for export to Europe as wild-boar.
Went up in that area a few years back and noticed some 4WD's with a refigerated trailer towed behind.
Was informed that was where they hung the carcasses which were collected into a larger container at a co-op and then freighted out for shipping to Europe.
Didn't have an opportunity to sample though.
