I've never seen water chestnut starch. So it sounds like it takes half the amount for equal thickening to corn starch?

Yes, in my testing Water Chestnut Starch is a lot more powerful than Corn Starch. It doesn't take freezing any better than Corn Starch though. Must be careful what you get is "Starch" not "Flour". Starch will have Chinese lettering, Flour is for Indian fasting recipes.
New If I can find that, I want to try an egg drop soup with it
I'll also do the clarified chicken broth. Should taste the same, but the presentation will be very different.
