One day M took out some chuck roast to defrost but never got around to making. So I saw that raw beef and took a chance. I sliced off a steak's worth of meat, then cubed it, about 1/2 inch cubes. I made sure to discard the gristle, a small percentage. Coated with a high temp oil, then spiced and let sit for a bit.
Simultaneously I slice and sweated an onion, halves, just enough to burn the edges, and sweeten it.
Heat up a pan, high, throw in a tablespoon of high temp oil, then throw the beef cubes in.
Pay attention. Toss and turn individual cubes for seared but moist doneness.
Pull off heat, toss onions in, put back on heat for a minute or so.
Wow. Some of the best steak I ever had for 1/3 the price.
