New IMAP to IMAP is how I last moved my email.
I moved my mail from a dedicated (but failing) server to an AWS EC2 instance a couple of years ago. Since I use an IMAP server, it was dead easy to make another connection from my client, then it was a moderately careful drag-and-drop. Walk away and come back in an hour or so.

(Don't use MS's Email clients - they don't like large IMAP mailboxes. I used Opera Mail which copes with mailboxes in the tens of thousands of messages - and likely way beyond.)
