. . the cooking times given in French recipes. Breeds and growing conditions are diferent Also, French recipes depend on rendered fat from pig feet for frying them, but out pig feet are nearly fat free, so added oil or lard is needed.

British and Irish pig's feet have to be soaked overnight, because they are heavily salted, while ours are not salted at all.
