I have cooked recipes with absurd amounts of garlic. With the long cooking specified, it becomes mild and flavorful, not at all like you might expect. I'm not sure why they cook it unpeeled, but with that long cooking it should be squeezing out of the skins anyway.
New Always use more garlic.
Seen elsewhere: "Even if it's a recipe for cooking a single clove of garlic, you should use two."

New change white wine to red and add a bunch of mushrooms, simmer on stove top for 2.5 hours better
