I was going to suggest trebuchet myself
The difference is gravity VS springs.
Simpler to build, very repeatable launches, safer, and with enough weight, very effective. ---------------------------------------

That's what I would suggest, too.
I've seen enthusiasts (re)create trebuchets, catapults and mangonels on quite a number of documentaries and trubechets are easily the safest and simplest device of the three. The tension mechanism required for the latter two adds quite a lot more complexity to the design.
