New Gruber has an interesting tip
disable Flash for everyday usage, but use Chrome (via Safari's Develop menu and its Open Page With option) for the few times you need it. See the section labeled CHEATING WITH GOOGLE CHROME:

New Another slick tip from Gruber
If you're on a page saying you need Flash to watch a video, try changing the User Agent string to Mobile Safari iPad (via the Develop menu) as a number of sites have been updated to use HTML5 with the iPad. Worked on the few pages I've tried it so far.
