I'd suggest a different Wiki product - perhaps MediaWiki, or Meatball. Or anything that doesn't have a loony in charge.

We use MediaWiki at work
Although I'm not the admin, so I have no idea of that part of how the product works.

I've set up MediaWikis before.
Easy-peasy, TBH. And once they're configured the first time, you generally don't have to touch 'em, except via in-Wiki changes. And that's just editing the silly pages.
