New Ah, noticed this line was missing eth0:
auto lo

eth0
to the line, and it appears to have fixed the issue. Interesting - when I was initially configuring the machine, I made an error in the network configuration, then backed up in the installer and corrected it. I wonder if this is why it left eth0 out of the config file for some reason...
