New Kinda like shark, but with a unique texture.
Shark is a firm, medium flavor fish. Skate, though, has a ribbed texture (as shown in the photo) which you split apart on the lines with a fork when you eat it.

The filet is of fine quality for those of refined taste, but I rather enjoyed the part those of refined taste would have discarded. I cut up the fin rays into squares and deep fried 'em. Ate 'em with salt and lemon juice - but then I'm a person who thinks the entire point of pig ribs is munching the crunchy cartilage.

Next time I'm going to try just skinning them and grilling them "bone in".

New I have several photos of that same species
taken at the Shedd Aquarium last winter. They had a tank in the floor, so you could sit down and watch them swim under you. It would never occur to me to eat one of them. But, that, as you know, is just me.
