New Easy to cook a Mackerel Pike (or other small mackerel)

Select your mackerel - one per person.

Make three slanted diagonal cuts on each side. Brush liberally with olive oil. Cut fresh bay leaves (easy for me to say, I have my own bay laurel tree - actually two) in half lengthwise and insert into cuts. Sprinkle both sides liberally with kosher salt and chili flakes.

Oil your foil to protect it from lemon juice, set out a row of thin lemon slices, place mackerel over the lemon slices and wrap the foil around tightly. Roast 20 minutes or so in a 350°F oven. Slide onto a plate.

Tasty.

Given free rein Laurus nobilus will adopt shrub format and try to take over the territory, spreading by root suckers. I often have to cut mine back (discarding hundreds of dollars worth of leaves at supermarket prices each time). Being a Medeterranian plant it will need good sun if grown in a pot, but partial shade is good (and will encourage a shrub rather than tree form).

On the West Coast we have also the California bay laurel (Umbellularia californica). I don't recommend it, particularly fresh, as fresh leaves and fruit can give you a splitting headach in seconds. Dried leaves may not have this effect and people do use them in food.
