And it tells me how to do what happened in the first place.
So my question is, how do I get it to undo that, and number the first page 1, then the 2nd page (after the page break at the bottom of page 1), 2, and so on?

I had to actually remove the page break, then reinsert the numbers. Then of course, I lost the special margin formatting for the first page, so I reentered those numbers for the whole document, entered my page break, and then changed the margins for the remainder of the document using "from this point forward."
It worked!

I saved one of the ones that worked as the new one and then deleted the non-relevant portion on the top (because they are two different letters).
I've managed to print the last few letters, but my default is still messed up, because I can't create a new file without the problem. So I'm still trying to figure out why, and I did reboot AND close word.
But at least the letters won't be late now.

Close Word, delete your normal.dot file, start Word.
That will recreate the standard template file as if it was a new installation.
