I went to the fount of all knowledge, my Mom. Her words: It's just a 4 legged wingless chicken. You know how to cook a chicken?

I did a roast with the first rabbit and just followed my instincts.

Pre-heat oven to 300 degrees (Mom's advice was to cook very slow)
Smear olive oil over the beastie
Puncture skin and insert garlic slivers
Sprinkle with a pinch or two of sage, parsley and oregano
Look at it and think, Hmm. What else would be good?
Pull out the Hungarian Paprika (damn, I love this stuff) and sprinkle generously
Place on roasting rack like Paris Hilton*
Cover with aluminum foil tent
Bake for 45 minutes
Remove tent, increase temp to 375 and bake for 10 more minutes
Let stand for 10 minutes before carving (cutting it up was . . . interesting)

Served with boiled baby potatoes liberally buttered and sprinkled with parsley along with fresh green beans from a neighbors garden sauteed in olive oil with pearl onions and garlic.

I was quite pleased with how it turned out. The skin crisped up nicely. The taste is richer than a chicken and the flesh was noticably firmer but not what I would call tough. I may have overdone the paprika a bit but only in that it overshadowed the other seasonings slightly.

Overall rating: Tasty bits; Yeah! Costy bits; Suck.
I could have bought 4 roasting chickens for what the rabbit cost.
