New Duck breast
I was listening to a cooking show on NPR today and they were doing ducks.

So I HAD to go out and buy some duck breasts.

Any favorite recipes? Atkins only though.

I'm just going to score the skin, rub some salt, and fry it for a bit.
Hopefully I'll be able to crisp the skin without screwing up the rest.

Well worth it.
New get some marmalade
cheap bordeaux and oj.
crank heat to 450 in oven for 10 minutes with duck in after heat is 450.
toss glass of wine onto the breasts, watch it sizzle, turn down to 225 mix oj and marmalade to a paste, smear and eat when done.

Split the full breast into 2.
Score the skin.
Salt & pepper.
Melt a little butter.
Fry in medium.
9 minutes skin side down.
3 minutes other side.
Butterfly to get the center cooked.
2 minutes inner/open side down.

Heaven.
