$1000.00 omlette

The restaurant pays $65 an ounce for the caviar, according to Norma's general manager, Steven Pipes. well 10 ounces ov caviar is a bit much with a whole lobster, either eat cavior or lobster, not both at the same time. thanx, bill

The $100 option would probably taste better anyway.
10 ounces of caviar is too much. Would overpower the dish as opposed to accenting it.
And the whole lobster is also overkill.
Interesting taste combo though...and I enjoy being creative with eggs.

Crap cuisine
I've made plenty of omelets. I've been invited to rich people's homes to teach them how to make omelets. I've made omelets "in production" for my long ago New Years Day brunch parties. I know omelets.
A 6 egg omelet is a double size, but even then an ounce of caviar and and two ounces of lobster is way overkill. She cana take ene more, captain!
The fact that even Donald Trump hasn't bought one of these is evidence this idea is just too damn stupid even for New York nouveaus.
In California it'd be laughed off the lot. Here we pay for the decor and a cute waitresses (as Mr. Tilly has observed), and maybe the wine. Who cares about the food - we can make better food at home.

A comment that I got in email about it...
And mixing caviar with lobster? Or mixing expensive caviar with anything? Just toss some jello and a lot of salt into it and you get the same result! (OK, maybe you'd have to make salmon jello.)
