Poor Knights of Windsor == Lost Bread == Freedom Toast

Ingredients:
4 Slices Stale White Bread
2 tbsp Caster or Confectioners Sugar
1 cup Milk
1+ tbsp Sweet Sherry
4 Egg Yolks, beaten
3-4oz Butter
1 teasp Ground Cinnamon
You favorite jam/preserves/fruit spread

Instructions:
1. Cut each slice in half.
2. Place 1 tablespoon of the sugar, milk and sherry in a wide-shallow dish and stir to dissolve the sugar.
3. Place the egg yolks in a wide-shallow dish and beat well.
4. Dip the slices of bread in the milk mixture and then into the egg yolks.
5. Melt the butter in a large frying pan.
6. Fry the bread until golden brown on both sides. Drain well and keep hot while the remaining pieces are fried.


To serve:
Sprinkle with sugar and cinnamon and serve hot with your favorite jam.

Of course, increase recipe for more than one person!
