I did a 10K wheelchair race once. The NTMFAC
who pushed me still has the whip-marks.
New BBQ? I got yer BBQ
sauces, a traditional base for BBQ sauce is
brown sugar, lea and perrens worcestershire sauce (accept no substitutes) garlic powder and parsley, the worcestershire sauce can be increased or decreased for the tamarind bite. This is the base from which all others are made.

Beef
start with the base, add horseradish, pepper splash of wine and a spoonful of woody's "cookin" sauce for hickory flavor.

Pork
use the beef recipe then add copious amounts of mustard and thin with cider vinegar

Chicken
base plus mustard and lotsa louisiana hot sauce. Gotta kill that chicken flavor somehow.

vary the above with anything and everything in the spice cupboard, curry is a good additive to the chicken recipe.

New Key West Barbecue Sauce
1/2 C ketchup
1/3 to 1/2 C sugar or honey
2 T fresh Key West lime juice
2 cloves garlic, minced
1 small onion, minced
4 T Worcestershire sauce
1 t hot pepper sauce

Bring to a boil in a heavy, medium sauce pan. Simmer for 20-30 minutes.

I love this stuff.

I have never found a better BBQ sauce anywhere. Period. Smoky, tangy and thick. Just the right balance of hickory to tomato/tamarind flavor and a nearly non existant hint of sweet in the background with a mild burn that grows with each bite till you start wondering when the back of your neck is going to start sweating. And then you realize it already is. Do not rub your eyes for a full two days after this meal.

But I haven't tried yours yet. Maybe you can talk Beep into hosting a cookoff for the 4th.

...just realize that if you think its good...chances are the other 99 people will think so too...and might be upset if they don't get any :-)

Actually...I can always have chicken or other non-meat alternatives available to be slathered with specialty sauces.
